Apricot and BBQ Chicken

This dish is very popular by most family members as it’s both smokey due to the BBQ and sweet from the jam.

I love it as it’s really simple and very quick to throw together!

I always serve this with rice so I can soak up the lovely sauce and I love a salad on the side made of from only rocket, grated parmesan and balsamic glaze. Nice baguette or garlic bread also goes well with it.. again, to soak up the sauce!

You will need the following ingredients:

  • 6 – 7 Chicken breasts
  • 2 dl BBQ sauce
  • 1 dl Soy sauce
  • 2 dl Cream
  • 2 dl Brown sugar
  • 2 dl Apricot jam/marmalade

Steps: 

  1. Place the chicken in an oven tray. Set the oven to 200°c.
  2. Mix all the other ingredients together in a pot and warm it up.
  3. Pour over the chicken.
  4. Place in the preheated oven and cook for about 30 minutes, or until the chicken is cooked through.

As my oven isn’t very good I don’t trust it when it comes to things like chicken, therefore I chop up the breasts and pre-cook them on a pan and then I place them in the oven tray. However, I would love to have a proper oven and even make the sauce a few hours before I tend to use it and let the chicken marinate in it for a while before I would chuck it in the oven.
